Meta's Mushroom & Leek Soup
This is a light soup, delicious flavour and
ideal to serve to your dinner guests.
Makes 6 small servings.

2 leeks, sliced thin
1/4 cup butter
1/2 lb. mushrooms, finely chopped
1/4 cup flour
1/2 tsp salt
1 cup chicken broth
3-4 cups of milk
1 Tbsp lemon juice
6 lemon slices
Fresh parsley
Melt butter and saute leeks in heavy saucepan until tender but not brown. Remove leeks. In same saucepan saute mushrooms until soft. Blend in flour, salt. Add leeks. Gradually stir in chicken broth, milk and lemon juice. Cook until mixture comes to boil. Simmer 10 minutes. Serve with a thin slice of lemon and a sprinkle of parsley.
