Vermont Pancakes
 
 
2 eggs
2 1/4 cups milk
1/3 cup melted butter (margarine)
2 cups all purpose flour
4 teaspoons baking powder
2 Tablespoons sugar
1 teaspoon salt

Beat eggs with electric mixer and add milk and melted butter. Stir dry ingredients together and add to mixmaster bowl and beat just until all is smooth. Heat an electric fry pan to 360 degrees and melt a tablespoon or so of margarine. Ladle batter into pan and cook until top side of pancake is covered with bubbles. Turn once and cook briefly till golden. Remove to rack or warming oven and repeat process. Recipe can easily be doubled and will yield about 65 three and a half inch pancakes. Cooled pancakes freeze well and they are also great reheated in microwave. Especially delicious topped with Vermont's own maple syrup.
